She returned to live where she grew up, and opened this olive-toned establishment at the foot of the village church. Claire Habchi, 33, who trained with starred and committed chefs such as Sang Hoon Degeimbre, has had a rich career. A fan of comfortable, reassuring yet surprising cuisine, Claire offers a culinary experience in 3, 4 or 5 steps. Apple-cider scallops, mushroom forest, salmon with sorrel, butternut-hazelnut-caramel... At lunchtime, a choice of two menus at an affordable price for a gourmet restaurant. In the evening, it's a blind menu, with the chef adapting to preferences and intolerances. Local produce, finesse, rigour, passion. Claire Habchi has it all.
