DRÉAN LANGOUILLE
As his name suggests, the frog is a language-based preparation. In the past, this specialty of the language jacket was called. It is made from pork and not beef. His taste does not look like the cooked tongue or the ankle but has a clean identity. The lobster may be consumed cold, in tranches, aperitif; cut into dice in a compound salad; filling in various preparations (galette, pizza, raclette…); hot served with a purée. Today, it is exclusively manufactured in Loire-Atlantique. It was Michel Dréan who baptized it. In the 1980 s, he bought a charcuterie in Saint-Nazaire. Before leaving, the owner reveals the recipe for the language jacket that she even holds from his stepfather, charcutter at Pont-Croix (29). He adopts it and finds a new name for him in 2003. In 2007, he created a factory manufacturing workshop «Dréan Langouille» in Vertou, where he multiplied the recipes: herbs of Provence, Espelette pound, cider and mushrooms, pepper and broken peas… You can buy your shop (by appointment) or ABC Terroirs at the foot of Nantes Cathedral (Saint Peter Square).
