On the fish side, in the same refined spirit, a back of cod with champagne cream or a pike-perch with white butter will not leave you indifferent, all these dishes being accompanied by delicately cooked seasonal vegetables. To finish on a sweet note, an exquisite hot and cold apple and pear au gratin with sabayon or a perfect Cointreau ice-cream will delight the taste buds.
