Yvonne Hégoburu is a stunning octogenarian and the most film-loving of moviegoers may have discovered her in Jonathan Nossiter's documentary Mondovino. He, who started a crusade against the standardization of tastes, could only fall under the spell of this estate which, for nearly 20 years, has been working in biodynamics to produce wines from organic agriculture. It goes without saying that in the palette of the jurançons, this vine is a must. Working the soil, hand-picking the grapes by successive sorting, organic viticulture, the work is colossal and the yield confidential: another reason to visit the winery where you can taste the Marie Kattalin cuvée, a wine with a strong identity. Fresh and incredibly well-balanced, this dry and mellow white has a lot of tension and fans of powerful flavours will adopt it like many before them...including Bertrand Delanoë, former mayor of Paris, to name but a few. The distinguished vintages in the Gault et Millau, the Revue des vins de France and the Guide Hachette have a very special palate, with a sharp attack and an acidity that finds a beautiful balance. Even the select guide Bettane + Desseauve was won over!
