Shepherd cheese maker transhumant for several generations, Julien Lassalle's farm is a stage of the Ossau-Iraty Cheese Route. You will be warmly welcomed at the farm to discover the history of the place and the local products. Purchases and tastings are possible to taste this exceptional cheese, often matured for a few months. From June to September, l'Estive can be visited. You will be able to learn all about the manufacturing process and become a true expert of the cheese made in the Pyrenees. Close to the Béarnaise tradition and its gastronomy.
