Hortense Reynard, a passionate breeder, shares her adventure on the networks under "La Bufflonne Béarnaise". Based in Mesplède, near Orthez, she has been breeding Asian water buffalo for the past year. After five years in a cheese factory and cattle farm, Hortense launched her project with determination, combining her experience to take up a unique challenge. Her herd, established in March 2023, enables her to produce rich milk that she transforms into artisanal mozzarella, after learning the Italian technique. Supported by a participatory financing scheme, she focuses on quality and animal welfare, selling this prized cheese locally. The Béarn region is thus adorned with an Italian flavour.
