Creator of the Macaron
In 1660, at the wedding of Louis XIV in Saint-Jean-de-Luz, Basque Country, the mother of Louis XIV and the Spanish Infanta Marie-Thérèse succumbed to the delicacy of Monsieur Adam's macaroons.
These same "Paré Gabéa" (without equal in Basque) crowned the glasses of white wine served in the Adam's pastry cabaret to the Russian refugees, artists, Breton fishermen and many others who flocked there at the turn of the century.
Today, Andoni and Miguel Telleria-Adam are developing the business they inherited from their father Jean-Pierre, maintaining tradition while innovating in the demanding craft of pastry, confectionery and chocolate-making.
With its prestigious origins in a royal wedding, the Adam macaroon is an integral part of Luzien and Basque heritage. Our mission is to perpetuate this recipe without altering it, over the generations of the same house. At the same time, we are committed to constant innovation, to create a pastry and chocolate shop of excellence, where gourmet pleasure rhymes with mastery, and creativity with authenticity.
