MAISON GASTELLOU
The Gastellou family has been operating the "Poutzia" farm in Saint-Jean-le-Vieux for several generations. From raising beef cows and pigs in the open air, to canning and curing hams. At the foot of the Arradoy mountains, on a twenty-hectare forested estate, the animals are far removed from the industrial pace of production, resulting in artisanal products that are all the more tasty and flavorful for it. Dry-cured hams from Bayonne and Garazi, sausages, chorizos, ventrèches, rillettes, pâtés..., jarred dishes and homemade Basque cakes! A fine savoir-faire.
