Daniel's specialty? Pork from Gascony and raised in the open air, thank you! In the small processing workshop, the meat gives rise to specialties based on the recipes of yesteryear: cured meats, charcuterie, preserves and fresh meat are available for direct sale either in the store in Salies-de-Béarn or at the farm, which you can visit. A 100% natural production which includes confits, liver pâté, blood sausages, confit sausages, gure amatxi, stuffed pork shank... The ham is the noble piece, its quality is exceptional with a softness and a subtle flavor of hazelnut, it reflects perfectly the gustatory qualities of the Gascon pig.
