Chef Benjamin Publie offers a rich menu of several menus. As a starter, you will enjoy fish rillettes with lime and a whipped cream with chives and Aquitaine caviar. The dishes leave a pretty place in the sea, as evidenced by the sturgeon pan fried in parsley and the monkfish medallion with basil. The land is never far away as shown by the duck breast cooked at low temperature and served with a sweet potato fricassee. Desserts combine chocolate and fruit such as roasted pineapple with vanilla.
