This gourmet restaurant offers a unique sensory journey. A native of the region, Julie chose to settle in this spa town to the delight of her guests. In the kitchen, chef Florian officiates with brio. Having worked at a number of Michelin-starred restaurants, he prepares creative, gourmet dishes using locally sourced produce. The result is delightful! The lunchtime menu allows everyone to sample this creative cuisine, while in the evening, taste buds will marvel at the cosy ambience of the 3 to 7-course menus.

Open all year round. Wednesday to Sunday, 12 noon to 1:30 pm and 7:30 pm to 9:15 pm. Sunday evenings by reservation only. Menus from €45 to €82. Children's menu: €17 (and €29). Lunch menu: €28. Terrace. Air-conditioning.
Owner's Message
Opened in May 2022, Roselières is our first establishment. Julie is originally from the Charente-Maritime region, so the choice of Saujon for our establishment was an obvious one. Our backgrounds are both complementary and original, combining a Master's degree from Sciences Po, development missions abroad, a taste for wine and experience in the great starred restaurants in cooking and pastry-making.
The Roselières restaurant is a little bit of all that. It's away to go back to the roots, to the reed beds near the Seudre river. The restaurant offers a gastronomic cooking turned towards the vegetable in a warm place. The richness of the Charente region could only push us to highlight our products, chosen and worked as much as possible locally. In the summer, the wooded terrace allows you to eat in privacy surrounded by the house's herbs. As far as wines are concerned, far from proposing only biodynamic references, we try to present beautiful and famous AOC as well as atypical and original French wines.
It is with great pleasure that we will welcome you all year long in our restaurant in Saujon.

Des produits simples, de terroir, magnifiquement travaillés tout en restant très accessible en terme de prix. Bref une table plus que montante de Royan Atlantique qui en manque tant (hélas). Si vous aimez la délicatesse et la surprise culinaire on ne peut que vous conseillez de .. réserver.
