The culinary adventure began with a delicate starter, a sea urchin from the Lérins Islands, accompanied by a velvety chestnut emulsion and perfectly candied lemons that added a refreshing touch.
The following course, an egg parfait with parsnip puree and grated bottarga, was a tribute to the complexity and sophistication of flavours. The smooth texture of the parfait harmonised wonderfully with the delicate sweetness of the parsnips and the salty hint of bottarga.
The saffron broth with spirulina foam offered a subtle flavour of exotic spices and an uplifting lightness that enlivened the palate and delighted the senses.
