This Aix institution was recently taken over by young chef Thomas Roret, with Julien in charge of the dining room: the restaurant is set in vaulted rooms dating back to 1495, with a troglodyte feel and a Zen, modern ambience that invites you to relax. You'll be amazed by the flavorsome cuisine, made with fresh market produce and inventiveness. A single 7-course "En terre aixoise" menu with wine pairings, an appetizer and a dessert, 3 courses to choose from. The menu changes every 2 weeks. Beautiful and delicious, with very attentive service.

Cuisine, d'un jeune chef, qui nous a sublimé, avec un mélange subtil de saveurs, dans son menu 5 temps de l'amuse bouche au dessert, suivant les plats en associant le fois gras, les cèpes, le poti marron, le bœuf, l'agneau, le fromage, le citron, le chocolat suivant le choix de son plat etc. Un régal pour les yeux dans l'assiette et des saveurs aux papilles , merci beaucoup pour ce moment passer dans en votre établissement. Un très beau établissement ????????????
