This Aix institution was recently taken over by young chef Thomas Roret, with Julien in charge of the dining room: the restaurant is set in vaulted rooms dating back to 1495, with a troglodyte feel and a Zen, modern ambience that invites you to relax. You'll be amazed by the flavorsome cuisine, made with fresh market produce and inventiveness. A single 7-course "En terre aixoise" menu with wine pairings, an appetizer and a dessert, 3 courses to choose from. The menu changes every 2 weeks. Beautiful and delicious, with very attentive service.
