An institute dedicated to wine and wine growers who programme courses and wine courses in Aix-en-Provence and its surroundings. The courses offer an introduction to oenology and reveal the principles and techniques of tasting, not forgetting the vocabulary of wine. The white whites, mellow and sweet. Alcohol balance, sugar and acidity. Light, structured red wines, structure and tannins. The evolution of wine in bottle. The main Wines (guided tastings of six exceptional vintages) take place in the Château castle, in Count Arnaud de Villeneuve, and are moderated by Joël Corre, Director of the Oenology Institute of Aix-en-Provence. You will learn, for example, that the reputation of the wines of France dates back to the Renaissance, when the great crus of the Gironde and the Côte d'Or were served in all European courses. Clos de Vougeot was the wine of popes and kings, Corton was Voltaire's wine, the Chambertin was that of Napoleon… The Montrachet, the world's most prized white, was Alexander Dumas's favourite wine, which drank her with knee and hat. The institute also proposes œnotourisme at the meeting of the winegrowers of Provence Sainte-Victoire but also organizes the discovery of the great wines around Châteauneuf-du-Pape.
