The Syndicat d'AOP Huile d'olive de Provence brings together over 80 mills, cooperatives and producers in 4 départements.
Created in 1997 and chaired by Olivier Nasles, the Syndicat d'Appellation d'Origine Protégée Huile d'olive de Provence (Protected Designation of Origin Olive Oil of Provence) brings together more than 80 mills, cooperatives and producers. It is through 4 departments (Var, Bouches-du-Rhône, Vaucluse and Alpes-de-Haute-Provence) that more than 200 olive growers harvest the 4 main varieties: Aglandau, Salonenque, Bouteillan and Cayon. The missions of this organization are to manage and promote the Olive Oil of Provence and to defend its identity and specificities. This appellation, at the service of a whole region, has enabled the word Provence not to be overused.
