MARC FAVALESSA
Marc Favalessa made his weapons at the upper school of pastry Yves Thuriès. A quarter of a century this artisan artisan exercises his know-how while respecting tradition. In his workshop «Le Fournil de Rousset», near Trets and Peynier, he concocted every day, with passion and rigor, a collection of tasty pastries: original and unique dishes, mounted parts, horns of abundance, evening or table cakes, crooks, chocolates… But the great specialty of the house remains the macarons that it masters to perfection and its touch of inventiveness and boldness adds to happiness, not to mention ingredients of choice: Bourbon vanilla, Venezuela chocolate, Valencia almonds… Recipes are little sweetened to sublimate natural flavors and balanced and delicately scented trims: chocolate ganache, raspberry jam, lemon cream, caramel, etc. The house has a laboratory dedicated almost entirely to the manufacture of the macarons. Try the thyme and lemon macaron, a wonder. Wedding cakes, famous American cakes, verrins, a real pleasure of the eyes and the palace. We particularly like the design of the lightning collection that is in color, flavors, and even striped or pea. Very original!
