The Camaïssette estate is known for its AOC Coteaux d'Aix wines. The property also has an olive orchard that produces olive oil stamped AOC Huile d'olive d'Aix en Provence. This estate has been in the family since 1901. Today, with the help of her son Olivier, an oenologist, Michelle cultivates 4 hectares of olive trees planted some twenty years ago. The four varieties (salonenque, aglandau, grossane and picholine) give two kinds of oil, an AOP and an AOC Provence pressed at the mill of the Velaux cooperative.
