MOULIN À HUILE DE LA FARE-LES-OLIVIERS
It is one of the oldest mills in the region. It took four years for the inhabitants of the village, between 1706 and 1710, to build on the order of his lord Henri Battalion. At that time, the Olive trees of La Fare provide olive oil throughout the Kingdom of France. But a century later, the mill suffers several hazards because of the recession and it will be transformed into a cooperative olive-growing company in 1925. With 850 members, the mill is now one of the most important mills in the Hexagon. It tweak 600 to 700 t of olives per year and achieves an average of 120 000 l of oil. A manufacturing that respects the traditional method: stone grinding and pressing by scourtins. Since 1995, the mill has also been equipped with a continuous chain. Three types of oil are produced: AOP Aix-en-Provence, an oil Tradition (an assemblage of aglandau and salonenque enhanced by the addition of bouteillan and picholine) and 2 monovariétales vintages (aglandau and picholine in green fruity). They are all presented in beautiful bottles whose black labels highlight the colour of precious nectar.
