Nolwenn had a macaroon factory in Mauritius, where she lived, producing macaroons with local flavors: pineapple, coconut rum, lychees... Her recipes evolved when she arrived in Provence in 2021, adding ginger, lavender, mimosa and calisson for macaroons with subtle flavors. By making them with 30% less sugar and local and/or organic ingredients, she achieves a powerful flavor and bold fusion. This "insolent story of taste" is generously shared during workshops at her home in Le Puy-Sainte-Réparade.
