LA BROUSSE DU ROVE
France's smallest AOC, Brousse du Rove is a fresh cheese molded in small cones, as good sweetened as salted.
Brousses du Rove have been molded in small conical molds for centuries, and the recipe hasn't changed a bit! The Gouiran family is one of the last remaining producers of genuine brousse du Rove, a small goat's curd of incomparable finesse that can be savored with fine herbs or sweetened with honey or jam. Please note: brousse production stops from November to January, as the goats are no longer producing milk. One of the last cheese dairies in Le Rove to produce and sell these little marvels, which became AOC in 2020.
