Japanese specialties made with fresh products in a restaurant.
We love the real Japanese chef, Yuji, who officiates live in his open kitchen. His dexterity in finely chopping vegetables and onions is amazing. And the fact that the chef is Japanese can be felt in the refinement of the decoration and the plates, as well as in the precise flavours of the sushi, maki, sashimi (long menu) and the bentos at lunchtime. Ajito's bentos, these small boxes with compartments that make a meal, are offered in a complete formula at lunchtime: dish, rice, salad, soup, fermented vegetables... In the evening, you can choose a menu with a starter (seaweed salad, silky tofu...), a refined dish and dessert (green tea ice cream, ginger ice cream, azukis...) or izataya, Japanese-style tapas. Fish is very present but some traditional preparations are also based on beef, pork or chicken. The freshness of the ingredients and the straightforward textures, tender or crispy, firm or melting, are the order of the day... The wine list features wines from the Aix region, while leaving room for Japanese beers and sake. Although Ajito means "hiding place", you won't have any trouble finding this Zen-like restaurant: it is located on the Place du Marché, at the entrance to Palette. We highly recommend it.
