A generous and passionate man, Jean-André Charial is making the estate inherited from his grandfather shine, and perpetuating a cuisine well rooted in the Provençal terroir. Chef Glenn Viel, 3 Michelin stars in 2020, revisits the classics of this gastronomic institution: freshly seared langoustines, sorrel, full-bodied cockles juice; red mullet, cabbage cooked in anchovy butter, bread enriched with a full-bodied red wine sauce; millefeuille tradition Baumanière, light cream with Madagascar vanilla, florentine pistachio and vanilla ice cream. Le menu Légumes de Saison: un enchantement! Tout de l'apéritif ( un olivier miniature dont on peux manger les olives) aux desserts, les vins de la région, le cadre extérieur : parfait.

Restaurant gastronomique 2 étoiles de Jean André Charial : à midi sous les arbres au soleil d’automne. Tout est impeccable : la vieille demeure, l’accueil, chaque plat est parfait (menu La Ballade des Baux), le vin « l’Affectif » de JA Charial-rouge-2011 à découvrir.
