We no longer need to introduce Hugues Mbenda, the talented young chef, formerly in charge of Orphéon, then the kitchens of Maison Montgrand and finally Libala, which we highlighted in our Citybook 2023 edition. Here he is again, alongside his partner Mathilde, in this exceptional kitchen with tones never seen elsewhere. A culinary journey in which the chef takes you on a journey from his native land, the Congo, to the European and Mediterranean influences of his recent gastronomic education. A succession of aesthetic plates where typical products from the markets of Kinshasa are mixed with Western touches: we particularly fell in love with the tempura of okra and its mango and pepper sauce, or the roasted filet of lean meat, on a spinach coulis with delicate notes of smoked fish, and the suprising plantain gnocchi. Everything is mastered, sublimated, bewitching. A cuisine of emotions that tirelessly translates the life path of Mathilde and Hugues, who we know will be at the forefront of the culinary scene in Marseille for a long time to come.
