Two La Mercerie alumni, Benoît Cadot and Léo Marzullo, had the brilliant idea of combining their energies to create a brand-new, choice bistronomic address in the Opéra district. Prémices is indeed one of our most exciting new gourmet addresses of the moment. Inspired, seasonal cuisine, served in cocottes with scrupulously selected wines: Bresse poultry mousse, steamed hake with apple and Jerusalem artichoke broth, asparagus and black vanilla ice cream... It's certainly high art.
