The transformation of Place aux Huiles continues in 2024 with the arrival of Acuda, a new modern bistro with a semi-gastronomic trend, opened by a group of friends who met at hotel school near Nîmes. The idea is to offer generosity on the plate, with a focus on seasonal and sustainable produce, and to organize textures and flavors to surprise. Eggs mayo miso gomasio, yellowtail ponzu and citrus sashimi, veal dumplings duo of bell pepper sauces and white sesame ganache to finish. We enjoyed a smoked mustabal, followed by snacked lean pavement steak, ratatouille and celery chips. Finally, the lemon gel cheesecake, sparkling in the mouth. A great success.
