What dish so beloved of the French could better symbolize Marseille and its great cultural and culinary melting pot? It was with this in mind that the Grandes Tables de la Friche and Emmanuel Perrodin launched this festival a few years ago. Traditionally, a grand opening weekend is held at the Friche Belle-de-Mai, followed by several days of festivities where couscous is honored and reinterpreted by hundreds of the city's restaurants and businesses. A star ingredient is chosen for each edition: after harissa, it was the sardine that took pride of place. once again, 2025 promises to be a culinary highlight.
