Gastronomic restaurant in Marseille with good products
The opening at the end of May 2022 of the restaurant of chef Edgar Bosquez on Rue Sainte sounded like an event in the Marseilles gastronomic scene. Having worked in Gérald Passédat's kitchens and graduated from the Paul Bocuse Institute, this Panamanian chef offers great promise. The menu too. The setting is elegant, the service professional. Alas, despite good products and a certain mastery of flavors and cooking, we remain hungry. And that's an understatement. The plates are beautiful, but the portions are derisory. For a dish based on pork, eggplant and miso, it was almost astonishing with three small pieces of meat, a slice of eggplant and a little miso foam. Virtuoso gastronomy can rhyme with generosity, in 2022, many chefs prove it. Mini-doses are excusable if the bites turn out to be incredible, which is not the case even if the different dishes were good. Too bad! There are many fine tables in Marseille today that offer more generosity and as much quality for the same price. This table will certainly delight the gourmets, but will not satisfy the customers who are not prepared for it. To sum up, talent, product, but little generosity.
