Bistronomic restaurant offering chef residencies (fes) every two months, created by Luciana Amado, herself a chef.
On Rue Sainte, this original address was opened by Colombian chef Luciana Amado, whom we know from her nomadic cooking at A Little Family. Determined to create her own place, she turned her attention to a former garage, and today offers a vast, uncluttered, modern dining room, which also features photo exhibitions. The idea behind AMO is to offer a two-month residency to chefs who are not yet in the limelight. It's a superb way of discovering inspired cuisines, as on this day when we enjoyed the dishes concocted by Marion Chateau. Zucchini fritters stuffed with ricotta on a fresh tomato coulis, followed by pig's shoulder confit with pepper and rosemary. Delicate and tasty. An inspiring place for new gustatory discoveries.
