Equinoxe is one of the big breweries of the Escale Borély. We stop in the morning for a coffee, a full breakfast or a refreshing drink at tea time, paradise! But it is for his table that we propose to discover or rediscover Equinoxe. The new chef Jérémy Ghilbert, straight from the famous gourmet restaurant the 4 small pigs in Toulouse offers a very nice map very well declined. At the map, the Essentials of the House (Assuming Persillade, the plate plate of the Estaque, the Mussel Cassolette, the Stove of Gamlow Pocketsakes at the Pastis Jeannot….), a seasonal collection (Velouté of potatoes at Lard, Burrata, Basil Leaves and raspberries; Green lemon, condiment, mint, coconut dressing; and the monthly creations (Camembert paneled to spices and beggars, maple syrup, potatoes and coppa grilled; Take advantage of the Noodles of St. James, Cabbage House, Confit of Leeks to Parmesan, Cream to the Smilade…). Desserts are also made home. An address to rediscover in an extraordinary setting!
