Excellent local and seafood cuisine in the restaurant of a 4-star hotel near the beach of Saintes-Maries-de-la-Mer.
The restaurant at this beautiful 4-star hotel, located right next to the beaches, oscillates between land and sea, and should delight gourmets with its pure Mediterranean flavors. The chef uses just the right amount of spices and herbs from Provence, cooking wild Mediterranean sea bass, sea bream, sole and turbot in a wood-fired oven... We particularly recommend the minute salmon marinade with fleur de sel and olive oil from Provence, as well as the Saint-Remoy fondue with herb sauce and walnut salad as a starter. To continue in the best possible way, opt for the pavé de loup sauvage de Méditerranée with dill or the magret de canard des Landes cooked on its skin in a wood-fired oven, with green pepper sauce. In any case, save room for the chocolate profiteroles...
