In January, in Sausset, the sea urchin is king. Known for its great finesse, this dish is celebrated with dignity all along the blue coast.
Every year in January, the famous sea urchin season kicks off in the pretty commune of Sausset-les-Pins, in the little marina to be precise. A true tradition on the blue coast, the famous oursinades are also held in Carry-le-Rouet. For several days, the sea urchin is king in Sausset. People flock from all over the region to sample this delicately flavored echinoderm. A craft market accompanies the festivities, making it all the more festive. Admission is, of course, free.
