MOULIN DE VELAUX
Located in the lower valley of the Arc, Velaux has one of the few traditional mills in Provence still operating with granite grinding and presses. If the co-op was born in 1926 of the will of a handful of olive growers, the equipment becoming obsolete and access to the centre of the difficult village, a brand new mill was installed at the village's exit in the 2000 s. However, the co-op kept a system to the old: The 250 tonnes of olives crushed on average each year are thanks to granite wheels and are pressed with scourtins. Today, more than 1 150 co-operators are members of the mill. There are three types of oil on site: a PDO Aix-en-Provence in fruité black, gold medal this year at the general agricultural competition in Paris, a traditional oil (assembly of all olive varieties of the region of Aix-en-Provence: aglandau, salonenque, triparde, picholine, grossane, bouteillan…) which has a slight ardence, flavoured (lemon, orange) and organic oil (assemblage assembly, salonenque, picholine and cunner).
