L'HUILE AUX MOINES
The Abbey Sainte-Madeleine du Barroux is currently the only monastery in France with a mill, and the monks themselves carry out their own olive oil. It is thus part of the very long olive-growing tradition of the monks since the life of the century. It all started in 1998: The abbey then recovers granite piles from an ancient mill in Tuscany. If they were to be used only for the crushing of abbey olives, very quickly, olive growers in the region wanted to press their olives. In 2008, the mill developed and now 200 local olive growers trust the know-how of the monks. No less than eight oils are produced here. The Nectar of the sun is destined for large distribution. In the family range, at a very affordable rate, there is the Risouleto (the rider), an olive oil from variable assemblies based on the tanks. In the local range, the Reïalo (royal), composed mainly of agass, in green fruity, the Joïo (joy) with the verdale and the tanned fruit in ripe fruit, and Siavo (the suave), with agass in black fruity.
