CROQUETTES AUJORAS
It was the croquette, a crunchy almond cookie with a hint of lemon, that made Monsieur Aujoras, a pastry chef in Avignon, famous in 1920. Several years later, Jean Vial and Jean-Claude founded the Croquettes Aujoras factory. Today, their son Stéphane, a professional pastry chef and chocolate-maker, ensures the continuity of this family business. The production process is traditional, and the product range has diversified. In the factory store, you can choose from macaroons, pain d'anis, sablés, navettes, bonbons au chocolat, chardons à la liqueur and ovalines au caramel au beurre salé, aux fruits rouges or à la vanille et fleur de sel. Guided tours of the workshop are available for groups, with tastings of some of our specialities.
