The Nogrette family raises snails organically. We buy them at the farm, on the markets of Coustellet and Apt. They are also at Naturellement Paysan and Luberon Paysan. You can find the snails live, in jars or frozen. They have preparations with sauces and croquilles. In fact, they have replaced the shell by a biscuit and it is very nice for aperitifs. They are always looking for new hyper dietetic recipes.
