If Hervé Joly rises in the olive grove of 2 ha of the estate, Florence, his wife, is spoiling small dishes based on olive oil and olives for the occupants of its guest rooms. They can thus taste his famous olive cake, his rabbit to olives and a multitude of dishes cooked only with the AOP Nyons oil from their production. A oil that the Joly presses to the mill of Haute-Provence, a modern mill. Florence also plans to organize weekends "olive oil" (it already organizes weekends "truffe") where its hosts could pick up their olives before bringing them to the mill.
