For 3 generations, this renowned house has been dedicated to Picodon de Dieulefit, a goat's milk tomme with a characteristic, slightly spicy flavor. The company collects raw goat's milk from as far away as Bourdeaux to make these AOC tommes. Cavet offers different maturing stages: from 8 days to 2 months and more. The Dieulefit method label implies a cheese matured for at least 2 months (14 days for a classic AOC picodon). Cavet picodon can be found all over the region, but it's worth going back to the source!
