The couple left the Paris region and his hectic life in 2002 to join Drôme and put himself at the rhythm of snails. That's whether their lives changed! In 2004, achevée training completed, Christel and Hubert created, on a Two-hectare Parcel, their hélicole farms: five plein parks, a breeding room, an incubation room and a processing laboratory. The Montvendre snail is a large-grey, Helix Asperta maxima, 100% farmer, French and natural. The farm of snails (300 000 snails per year!) greets visitors in summer. From garden to fork, its production includes terrine in small jars, snail donuts and a series of frozen snails: classical in their Burgundy way, in veined butter, or in a puff shell filled with various sauces, goat/tomatoes, walnut/roquefort… These delicacies can be purchased at the farm, in some local shops, on the farm site, and in the region's Christmas markets. Montvendre's snail is found at the restaurant table of Michel Chabran.
