Emmanuel Chauvin and Aurelia Spitaëls have several strings to their arc. They officiate within their area of the Blue Thistle, a few kilometres from Dieulefit, on the land of the small village of Roche-Saint-Secret-Béconne, as vine growers, lavandiculteurs and growers. In 2015, they built a new cellar. Their lavender and lavender, as well as their wines, which fall in the three colours, are marked with organic label. The area also produces apricot nectar. So there's more than one reason to stop there.
