The spirit of the house has been maintained, and the quality has not wavered since the arrival of Eric Collard, who trained with a saucier at Bocuse and a former chef at Mère Brazier... Eric Collard prepares dishes using fresh, local ingredients. His star dish is MOUSSE de BROCHET with shellfish sauce. We also love the tomato bavarois or the filet mignon with old-fashioned mustard sauce.
