DEBROAS
The art of pastry and chocolate making has been passed down in this Valentine's family for three generations. Pierre Debroas studied with his father before continuing his studies in a few pastry shops in the Rhône-Alpes region, then leaving to work for a year in the Sultanate of Oman. In 1994, he opened his own store, rue de l'Université, a stone's throw from the cathedral, and since then has been delighting the gourmands of Valencia and the region. At Debroas, among other in-house creations, you will find the famous Cosy®, which has been Debroas' speciality since 1950, in the shape of a submarine. This cake blends the flavours of a marzipan dough with ganache, orange peels and nuts. We can also mention the Pierrot with hazelnut praline, the gold leaf pavé, the walnut kernel chocolate, the picodon chocolate with goat's head... Although the nougatine praline is also a poem! Not to mention the Florentines.... A very chocolate address, but also "macaroni" and even "petits-fourées"!
