LE COTEAU DU MOLE
Son and grandson of winegrowers in Ayze, Olivier Gantin has taken over the vineyard in his own way. A way that is closer to his grandfather's ancestral methods, since his vineyard, currently being converted to organic, produces natural wines, living wines, vibrant wines. No chemical inputs in the grassy vineyards where the gringet grape variety flourishes. Still wines to match, it's excellent, with shellfish and seafood, and sparkling wines to celebrate with family or friends. A "confidential" production that is already making a name for itself.
