LES MARMOTTES
These Marmottes don't wrap chocolate in paper, they wrap cheese! In winter, Claire Boisier's abundant cows stay in Brison, where the farm is located. In summer, they go up to the Solaison plateau to fill up on the good grass and flowers of the mountain pastures to give cheeses with an even more savoury taste: tomme, marmot which is like reblochon but without the name, marmottée tomme which is a mixture, tomme with fennel, smoked tomme. Also blue cheese from Solaison, a cheese created 4 years ago, bonnavaz which is a kind of comté or gruyère created 2 years ago, serac and white tomme. Here is a selection of delicious cheeses to compose the best platter. You can discover them directly at the farm or at the sales points, notably in Vougy on the parking lot of the "Âme du Vin" every Friday from 3:30 pm to 7 pm.
