Hidden in the elegant Hotel l'Héliopic, L'Akashon - "in secret" in Savoyard patois - is a beautiful discovery. The setting is felted and the decoration, a contemporary style of raw materials of wood and stone, inspired by the industrial past of the Chamonix valley and sublimated by the play of light that makes the place very cosy. In harmony with the cuisine of chef Julien Binet, who combines the ingredients of the mountain region with traditional French know-how by revisiting the dishes with the creativity of the new generations open to the cultures of the world. The menu evolves according to the seasonal markets, between bistronomic dishes and refined dishes worthy of the great houses: Mirror egg, grated foie gras and poultry juice with summer truffle; lacquered monkfish with Teriaki sauce and barley risotto pearled with Piedmontese pearl; roasted rack of lamb in a casserole dish, coffee-genepi sauce, hazelnut chutney and Valdostine polenta; Savoy reblochon in a crust and potatoes cooked in hay... As for sweetness, the flavours are just as elaborate with these candied strawberries with spices and lime, combined with emulsion and vanilla ice cream accompanied by an almond crumble.
