An institution in Chamonix! Albert I, the resort's historic and luxurious establishment, has been beautifully renovated and manages to combine the charm of the past with the warmth of the authentic, with modern lines and top-of-the-range comfort. The result is remarkable. Rewarded with two stars, the gourmet restaurant is a tribute to the sumptuous Hameau Albert I hotel, which has been run for five generations by the Carrier Maillet family. At the helm since 2018, Damien Leveau, who assisted Pierre Maillet, the son-in-law, for four years, in place since 1999. Here, Savoy cuisine is executed in the tradition and revisited with art. Firmly rooted in the mountainous soil, the dishes sublimate the production of the Haut-Savoyard farms with the famous Maison de Savoie menu that propels us into the Kingdom of Piedmont. A gustatory journey through eleven variations of gourmet flavours that vary according to the season. A la carte du printemps des associations inventives: a semi-smoked Lake Geneva féra, crayfish, crab in tempura and coral ice cream or tortelli of morels, foie gras and hazelnuts, creamy egg yolk and oxalis, etc.; roasted blue lobster, homemade blood sausage, apples and diots from Savoy, parmentier of polenta; racan pigeon breast, Mont Blanc country snails, goat's milk, spelt and celery; soufflé with Chartreuse and liquorice ice cream, crepe Suzette, salted butter caramel ice cream... A tribute to local products that an exceptional cellar of 19,000 bottles and a thousand appellations - nearly 650 of which are à la carte - makes it possible to accompany them without any false notes.
