In this marvellous setting, chef Olivier Suire offers a skilful blend of tradition, the famous Bise recipes, and his own personal creativity. Among the dishes on a delicious menu are roast sea bass, squid and shellfish, aïgo boulido as a vegetable Vierge or a Rack of Lamb with thyme, before an intense chocolate.
