Founded in Bresson in 1852, the Chavant dynasty held the reins for many years, before being taken over by chef Fabien Capogna. It's a family-run establishment where classicism and elegance blend with a few welcome touches of modernity. The à la carte menu features fine local produce to be enjoyed on the flower-filled terrace. Don't miss the famous blue lobster. Excellent service from Guillaume Bliguet. An institution.

However, the pictures in mouth are always nicely balanced and classic dishes, such as St Jacques are simply fried or grilled fillet of beef. Finally, the desserts never disappointed me!
