PALEGRIE CHEZ L'HENRI
Chef Guillaume Monjuré is never without his Palégrié. It's a name that has followed him to Lyon, Corrençon and now Méaudre. This version of the Palégrié, entitled Chez l'Henri, is without doubt the most authentic, as it is located in the renovated family barn, which has been converted into a gourmet restaurant. With a direct link to the terroir and powerful nature of the Vercors, Guillaume Monjuré lets his emotions express themselves in a creative and daring cuisine, while returning to traditional cooking methods (the flame).
