At the gateway to Pilat, set in a beautiful château in the middle of a park, L'Éclosion is a delight to behold. Trained at some of the finest restaurants in France, chef Pierre Carducci puts all his know-how at the service of the finest produce. The son of an organic market gardener, he offers gourmet cuisine in this spirit, creating superb seasonal combinations in superb dishes. Vegetables have pride of place - there's a small garden in the grounds for picking - but other noble products take gourmets on a journey. A fine wine list.
